Abstract

Dahlia tuber flour is flour made from dahlia tubers which are dried, crushed, then filtered to obtain the desired flour. One of the uses of dahlia tubers is making them into flour to increase their value of the tubers. Tuber age taken to be used as flour ranged from 6 months to 8 months. The purpose of this study was to determine the acceptability test and nutritional value content of the Dahlia tuber sponge. This research is experimental, namely making dahlia tuber cake from the basic ingredients of dahlia tuber flour and wheat flour. 25% dahlia tuber flour, 75% wheat flour, and the second treatment with a ratio of 75% dahlia tuber flour, 25% wheat flour. The panelists in this study were children aged 7-12 years, as many as 30 people. Acceptance test data obtained were analyzed descriptively and the nutritional value of fiber and carbohydrates was determined using SNI 01-2891-1992 and the AAS (Atomic Absorption Spectrophotometer) method which was tested at the Laboratory of the Medan Industrial Research and Standardization Center. The results showed that the acceptability test and nutritional value content of the preferred dahlia tuber cake (Dahlia, Sp) with the addition of 75% dahlia tuber flour, 25% wheat flour, (P2) on organoleptic taste 118 (98.3%), color 101 (84.1%), scent 100 (83.3%) and texture 78 (65%). The conclusion of this study is the addition of dahlia tuber flour in the manufacture of sponge cake provides an increase in carbohydrate and fiber nutrition in the cake. Suggestions to the public can make sponge cake as an alternative ingredient for additional food to meet fiber, made from wheat flour and dahlia tuber flour which can be made at home and guaranteed to be healthier, more nutritious, and of course without other additives.
