Abstract
Mathematics learning at schools is often not contextual and it is not associated with existing cultures. By applying culture in mathematics learning, students will find it easier to dominate formal concepts starting from students' real-world concepts. This research traced mathematical concepts in the tofu making process. Tofu is a typical Indonesian food that has an ethno mathematics concept in the manufacturing process. The traced ethno mathematics is mathematical concepts learned at school. Therefore, mathematics found in the tofu making process can be used as an approach in learning mathematics. The purpose of this study is to show mathematical concepts as an activity. This research used qualitative descriptive research methods with an ethnographic approach, data collection techniques carried out, namely observation, interviews, and documentation. Data analysis techniques used Miles and Huber man’s model in the form of data reduction, data presentation, and drawing conclusions. The conclusions resulting from mathematical concepts in the process of making tofu are the concept of number operations, the concept of arithmetic, the concept of time calculation, the concept of comparison, the concept of measurement, the concept of geometry, as well as the concept of water discharge and volume.
